This Vegetarian Bibimbap recipe is bursting with fresh veggies, glazed tofu, and tons of flavor!
Ingredients

  • 2 Carrots, medium
  • 1/2 English cucumber
  • 4 Garlic clove
  • 1 (1-inch) piece Ginger
  • 3 Green onions
  • 10 oz Shiitake mushrooms
  • 1 (10-ounce) package Spinach
Refrigerated
  • 4 Eggs, fried
  • 1 (14-ounce) package Tofu, extra firm
Condiments
  • 1 Gochojang sauce
  • 1/2 cup Soy sauce
Pasta & Grains
  • 2 cups Grain rice, medium
Baking & Spices
  • 1/3 cup Brown sugar, packed
  • 1 tsp Gochujang
  • 1 Pepper
  • 1/2 tsp Salt
  • 1 pinch Salt
  • 1 Salt
  • 1 Sesame seeds
  • 2 tsp Sugar
Oils & Vinegars
  • 1/3 cup Rice vinegar
  • 1 tsp Sesame oil
  • 2 1/3 tbsp Vegetable oil
Prepared
  • 1 1/3 cups Kimchi
